Get the Most Out of Your Cookware

Start on medium-low heat to avoid overheating. Carbon steel is extremely responsive to heat.
Building a seasoning: Similar to cast iron, you'll want to season your carbon steel to develop smooth, nonstick-like performance over time.
Remember: your pan isn't nonstick (yet). Until well seasoned, cook with butter or oil to avoid sticking.
Hand wash your pan to preserve the seasoning you've worked so hard to build up. Avoid detergents and scouring pads, stiff brushes, or other abrasives.
Avoid allowing acidic foods to sit in your pan for extended periods of time - this includes tomatoes, lemon, vinegar, or wine, which can strip your hard-earned seasoning.
