Homemade French fries that are just as delicious as their fast food cousins but without all the grease.

- Idaho potatoes
- kosher salt
- olive oil
- Wash potatoes and cut into fries. Place in a bowl and coat lightly with olive oil and kosher salt. Cook in microwave until just tender, about 2 minutes per potato.
- Working in small batches, fry in a large non-stick skillet with just a little olive oil on high heat. Make sure that all fries come in contact with the pan, one layer at a time. When 3 or 4 sides are brown, remove fries and place on a paper towel. Keep warm in the oven. Repeat with next batch.
