Brunchtime Popovers

Recipes like this one feel as if you’re cheating: popovers rise up like they were baked by a fancy pastry chef, when all you did was whisk four ingredients together and throw them in the oven.


  • 2 tablespoons (1/4 stick) butter melted, plus more for greasing the pan
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 cup whole milk
  • 3 large eggs

  • Yield: 8 Servings
  1. Position a rack in the center of the oven and preheat to 450°F. Generously butter a 12-cup popover pan or muffin tin.
  2. In a medium bowl, whisk together the flour and salt. In another medium bowl, whisk together the milk and eggs until combined. Add the milk mixture to the flour mixture and stir to combine. Don’t go too crazy with the mixing; a slightly lumpy mixture is okay, as long as all the flour has been incorporated. Fold in the melted butter.
  3. Divide the batter evenly among the cups of the prepared pan. Bake until the popovers are puffed and dark golden brown, about 25 minutes. Serve warm.
