Sizing It Up


Lamb sold in the United States is sourced primarily from the United States, Australia and New Zealand. There are four grades of lamb, Prime, Choice, Good and Utility. Choice is the grade most widely available, and is considered very good quality lamb. Lamb from Australia and New Zealand is usually smaller than lamb from the U.S., so the various cuts – like legs or racks of lamb – may be somewhat smaller.
