Anolon’s Kyotsu® knife is a happy medium between the straight blade of a santoku knife and the curved blade of a chef’s knife. The Kyotsu edge has a very slight curve, so it has the decisive chop of a santoku but with a little more rocking motion than a classic santoku. The divots along the sides of the blade create small air pockets, which reduce drag when cutting. Kyotsu means "universal" in Japanese and the Anolon® 5.5" Kyotsu® knife is universally functional. The size is ideal for smaller hands or smaller jobs.
